At Last, The Secret to a Healthy and Easy Toddler Breakfast

Easy breakfasts seemed like a thing of the past when I became the parent of a toddler. So many mornings of “no, I don’t like that.” Why was my little nugget being so picky?!
In the days before parenthood breakfast was so simple — some days it would be coffee and toast, other days, a smoothie to go. Geez, sometimes I’d even have ice cream because it was too hot and all I had.
Then one morning when the heat was unbearable we decided on smoothie bowls all around! Yummy, packed with nourishing fresh ingredients, and so easy. We didn’t hear the usual negative response. When asked what it was we replied “it’s breakfast ice cream!”
Here’s our recipe for Tropical Breakfast Ice Cream!
Tropical Smoothie Bowl, aka Breakfast Ice Cream

Scoop of açaí sorbet or pouch (or similar)
1/4 cup of yogurt (vegan or dairy)
1 cup frozen fruit (pineapple, mango, strawberry)
1/2 frozen banana
1/4 cup coconut water or milk
1 handful of spinach (or other greens)
Directions
- Throw all the ingredients into a blender.
- Blend just enough to keep texture like ice cream.
- Top with berries, banana slices, coconut chips, granola, chia seeds
Notes
- Our favorite yogurt to use is Wallaby’s Whole Milk Greek Yogurt in Vanilla
- No time to eat it as breakfast ice cream? Just make it a smoothie to-go!
